Pasta, oil and wine. These are the very solid bases of the Apulian diet, traditionally recognized as genuine and typically Mediterranean. Fish and vegetables are the bases with which the most typical Apulian dishes, rich in flavour are prepared. The Apulians have a particular predilection: they tend to invent composite dishes, putting together foods that at first sight might seem far apart. In this way some of the most exquisite regional specialties were born, such as the famous "orecchiette con cime di rapa e acciughe".
